Paul started his employment on Grimsby docks on work experience, at the tender age of 15. He's done all of the jobs going - from labouring, filleting, to forklift driving, but his passion lies in smoking. He's got nearly 20 years experience in the chimneys, and has smoked an array of fish, including Cod, Haddock, Halibut, Coley, Salmon and Trout.
What does he like most about working on the docks? The camaraderie between colleagues. He has many a tale, not all appropriate, but he certainly has graduated from the Grimsby Docks School of Life.
